In a medium bowl, whisk together flours, walnuts, baking powder, cinnamon, salt, nutmeg, cloves and ginger.
In another medium bowl, whisk together brown sugar, buttermilk, oil, vanilla and eggs.
Pour into the dry ingredients and stir just until combined, then fold in carrots.
Preheat waffle iron. Spray with non-stick spray, and cook 3 1/2 or 4 minutes, or until browned.
Makes 5-6 waffles, depending on your waffle iron.
